Coquito is an eggnog-like coconut cocktail served in Puerto Rico for Christmas. My interpretation of the drink includes cinnamon and nutmeg to combine the tropical flavors with the warm and cozy scents of traditional egg nog. It’s festive!
Some recipes I’ve seen include eggs, which I think makes the drink too rich. This recipe uses coconut milk. If you’re not sure how that is different from coconut water or cream of coconut, check out our post explaining the difference.
A small serving is all you need, so this batch could easily serve 10 people. Adjust the amount of rum you use to suit your taste.
Ingredients
- 14 oz coconut milk
- 7 oz sweetened condensed milk
- ½ cup water
- ½ cup rum
- 1 tablespoon cinnamon
- ½ teaspoon nutmeg
Instructions
Use a blender to mix ingredients, then refrigerate for at least one hour (up to 8 hours). The ingredients may separate during refrigeration, so stir before serving.
