This week we feature the classic prohibition era cocktail, Bee’s Knees. The name is a play on the old saying “The Bee’s Knees” or height of excellence and the honey used to mask the liquor taste. Most booze didn’t taste so good back during in the 1920’s.

Ingredients:
2 parts Gin
1 part honey syrup*
1 part lemon juice

Directions:
Combine ingredients in a cocktail shaker with ice. Shake well (10 – 20 seconds). Strain into a chilled cocktail glass. Garnish with a lemon spiral

*DIY Honey Syrup:

Ingredients:
1 part Honey
1 part hot water.

Directions:
Mix until honey is dissolved. Let cool.
